Hi, I just relocated to Nola. And I am a first time home owner. The house I bought had a single car unattached garage. I cleaned it out and tore out old cabinets and shelves. I discovered termite damag. Had it treated and repaired. Had it rewired and electrical updated. So my next project is to insulate and put up drywall. I am wanting to do just the walls and leave the ceiling and rafters open. I know it will not keep it warm or cool. And I understand but the wood is so beautiful I don't want to cover it. So I am open to help on how to do theinsulating. Do I put up like a plastic barrier before I put up the insulation? Or do I do it after? What kind of drywall would be best to keep moisture out it isNew Orleans and really humid here.

Congratulations on being a home owner.
Possible rigid foam core insulation on the roof sheathing (no plastic needed) as foam will not break down with moisture.... if you want to keep the wood exposed...got pictures?

Why insulate, treat the wood and ventilate the building to control humidity. If you want to hear or cool, insulation goes in but insulation will not do much else especially if you only seal part of it. Looks like you have a nice workspace, if the wiring requires protection, box it or use conduit. Free standing cabinets pulled an inch away from the walls will let air circulate and prevent rot. Welcome to GJ and congratulations on home ownership!
