My garage is a 16x26 ,with 12' ceilings, addition to my existing garage. Im going to run all my power then insulate. I'm torn on the wall covering. One side is a brick wall (26') with a cut out into my existng garage. I just bought 50 partial sheets of 3/4 plywood from here

Im gonna use these to build some cabinets, shelves, etc. Being 3/4 plywood they will be heavy. Im afraid that it will crush drywall if I use drywall on the walls. Im worried about bolting a large cabinet overtop of drywall and crushing it. Then I was thinking : put a level or 2 of the plywood on the walls and do the rest in drywall, go get more of this 3/4 plywood and do the walls and drywall the ceiling. Just confused on the best route to go. Right know I have a completely blank canvas. My garage is gonna be a work area, not a man cave. Im gonna paint the walls, etc white to make it as bright as I can in there. I have searched the forums and read for days. Only thing it did is make me more confused on what to do.
Also, How are those side mounted garage door openers? Is there a better option? I do not want a standard door opener because I have a full sized lift going in.
