Hey there guys and gals- I've been a fan of the site for awhile now but I've never introduced myself and said "Howdy!"

So, formalities aside, I've gotten myself into a pickle and I was hoping some of you kind folks out there could offer some advice/opinions.
I'll start at the beginning: I've got a 16'x24' timber frame barn (ca. 1890's) that was in a horrible state of disrepair. So I decided to take it down (sensitively, as there are still many good, solid timbers) and replace it with a pole building/garage, as opposed to a stick frame garage due to my budget, or lack thereof...
Fast forward to me wading through a sea of red-tape bulls**t with the town, and my dream of a 32'x40' building with two half length sheds has been whittled down to a 26'x38' with no sheds in order to keep the footprint below 1,000 sq ft.
I'm looking into getting the plans finalized ASAP to hopefully break ground before it gets too cold, BUT I'm torn between maximum ceiling height or going with attic/storage trusses and sacrificing overhead. My thinking was with a 14' ceiling height I could easily build out storage to suit my needs, ie: have a loft like structure that would afford nearly 6' of overhead space while maintaining a useable space below (for work benches, shelves, etc.) However the thought of having a pre-existing storage space built in is appealing to me as well, and would help out with heating efficiency since I could close it in.
The space would be mixed use; some automotive/mechanical, some woodworking, some brewing and probably a good amount of hanging out drinking beer and listening to music
