new member-new project, looking for advice

Hey guys,
Located in Houston Tx, where it's hot and humid or cold and humid all year long...
I'm having a metal building erected in my back yard. The building is made by Eversafe. It's 30X35 ft. with 12 foot walls. It'll have two 10X10 ft. roll up garage doors in a drive through arrangement, 8 windows and 2 walk in doors.
The entire building is going to have insulation installed. I assume it'll be the chrome looking bubble wrap stuff I've seen on the website.
Do you know how well that works?
I'm trying to decide how I will want to finish out the inside of the walls before I start running the electrical and move my stuff in and I'm looking for ideas.
There will be an area for vehicles (or my boat) between the bay doors that doesn't really need AC but probably needs to be welder friendly. The rest of the building will be used for periodic metal fabrication and machine work. (along with storage of all of our junk...
If i installed another layer of regular fiberglass insulation and then plywood or something else on the inside, would it make sense to AC the whole thing?

You might want to have the windows mounted higher than normal. That gives more security, just as much light and could leave more of the walls for storage. My shop windows are 12 feet off the ground and no way without a ladder to get to them. My shop is built on the side of a hill with over 8 foot of foundation wall before the level of he floor.
