Nuts/Bolts/Washers Assortment

I am stocking my bins with an assortment of nuts and bolts.

I am looking at grade 8 and in the following sizes:

1/4x.75, 1/4x1, 1/4x1.5, 1/4x2
5/16x.75, 5/16x1, 5/16x1.5, 5/16x2
3/8x.75, 3/8x1, 3/8x1.5, 3/8x2.5
7/16x1, 7/16x2
1/2x1, 1/2x1.5, 1/2x2, 1/2x3, 1/2x4

These will be in both fine and course and the metric equivalent.

I have about 112 bins and am limited on space for more bins.

Does this sound like a good assortment?

That sounds like a very good start. My hard learned advice is, leave room to grow! There are lenghths in between what you mentioned and of course longer in length and different diameters. I set up a drawer system of hardware exactly similar to what you are planning. Within a very short time I had to completly reorganize and relabel everything to fit more lenghths and diameters.
Of course you need a space for "unable to classify" too
Organizing sheet metal screws is much easier

I wish I could do that. Ya since you are limited by bin space that looks good. How much do you think that will set you back?

Grade 5 might be handy also -- depending on what your doing etc....

I find I really need very few grade 8 fasteners. Most stuff isnt designed for them anyway. Maybe you need them for specialty work? 99% of auto work is 5, general fab work 2 and 5 and fines are fairly rare.

Assuming you're putting together hardware for use on your Jeeps,I'd go with GR5,course thread in the sizes you've listed.Add flat and lock washers,nuts,locknuts and sheetmetal screws-#6,8,10 and 12 in lengths from 1/2" to 2" and maybe some TEK screws. If you choose to use GR8 for highly stressed situations,I would only stock the sizes that you know you'll need-Why use a bolt that costs almost double for a light duty situation?
I would also start with minimum box quantities until you find what you use most.
How many metric fasteners are there on your Jeeps-If only on engine/trans,etc,I wouldn't bother with metrics. The metric assortments in the shops I've worked in were mostly dust collectors-metric hardware is easily found from industrial supplies like McMaster-Carr and can be ordered and bought in limited quantities for a specific use.
