Shop is 24’x40’. I realize there’s a lot of factors to consider but all things considered, what will be more effective, one unit rated for the shop size or a little bigger or two units that when combined are good for the shop size Or a little bigger? Are there negatives for going way over what’s required? im right under 1000sq/ft, do I need to stay with a unit sized right around that or would it be better if the unit is good for say, 1500 sq/ft. I would think there is a point of diminishing returns there somewhere

That's a big space for a single unit...i think you will end up with really uneven cooling.

I'd do two units as far away as possible, sized appropriately. If you oversize a/c, you'll end up with faster cooling but poor dehumidification

I cool the first floor of my house with a single window unit. It's about 1100 square feet divided into multiple rooms. As long as I leave doors open it cools fairly evenly. One room farthest away sometimes needs a fan to get cool air through 2 doorways.

An open are like a garage will have no issues with one properly sized unit. As mentioned an oversized ac won't pull enough humidity.

I had a 12,000 BTU window unit in my 24x38 foot garage for a few years. I was in a high up window in the middle of the 38 foot wall. I hot days it kept up just fine as long ad I left it run 24/7. It would not catch up if I started it in the middle of the day. But it cooled the whole shop. I did have a ceiling fan to help move air.

With a building that long, I would want 2 units. Mount them on opposite walls at opposite ends. Bonus. You can probably use 14/2 wire with 15A breakers.
