I am thinking of going with osb on girts in my pole building. Girts will be 2x6 on 2' centers. That will leave about 19" where there will be no support on the sides of the osb. Will it warp and look like hell? Also, what would I nail the osb with? I don't want the nails more than 2" long.

If you use something heavier than 7/16 it should be ok.

While I would never do osb if I had to I would use screws. I probably would use either GRK cabinet screws or spax bugle heads. I would not use drywall screws. Screw will allow sheathing removal for wiring or other maintenance in the future

If nailing I would use these in my coiled nailer. https://www.menards.com/main/hardware/fasteners-connectors/collated-nails-screws-staples/collated-nails-cleats/bostitch-reg-2-x-092-15-deg-wire-coil-hot-dipped-galvanized-ring-shank-full-round-head-siding-nails-3-600-count/c6r90bdg/p-1444425534535.htm

Even though I hate people that use staples on roof decking and shingles interior sheathing it would be ok.

I just completed my inside walls. I did vertical studs on 24" centers; with 7/16" OSB 4x10 sheets (vertical). I don't have any warpage or waves. I used 1 5/8" dry wall screws. Just be careful not to bury them.
Everything I did was based on recommendations from other users here and on a couple other forums.

I've had 7/16 OSB in my shop as you describe for many years and no problems with the joints.

I've just finished hanging OSB in mine. With 12 screws per sheet, even in the long sides end on a stud, you'd only have a screw every 2'. You'll be fine.

I am not a fan of OSB but if I used it, I would put the "H" clips on the edges to support them:
