I'm thinking about putting OSB on my garage walls and ceiling. What thickness are you guys using for this application?

Personally, I'd reconsider using OSB on the ceiling.

The reason guys use OSB is so they can attach stuff to the walls. Ceiling? You are just increasing your fire hazard.....or rather, adding fuel to the fire.

Is this an attached garage? If so, the wall between the garage and house MUST be 5/8" type X drywall.

Otherwise....1/2" on the walls is what I've seen most guys use.3/4" **** is going to be real heavy.

This is a detached garage. maybe I could find some recycled white metal siding for the ceiling.

I used 7/16 on the walls and ceiling. I sanded the sheets before putting them up, then caulked the seams, sanded the seams down, and then primed and painted.

7/16th on my walls. I left the ceiling exposed. I think that would be a lot of weight on the trusses, if that's how yours is constructed. My garage is detached.

OSB in my area is nearly $20/sheet now, hard to justify it as a cost saver over 1/2" plywood until the price comes back down.

7/16 walls and ceiling. Was $8/sheet when I built.

If you are 24" OC like I am, 1/2 ply will warp and wave.

$17 a sheet at my local Homey D. Haven't checked with the lumberyards but I'm guessing closer to $20/sheet. I used 7/16" on my walls, nothing on the ceiling. So far only one coat of primer, it will get a coat or two of cheap white latex paint when I'm ready.

I'd definitely consider metal liner panel for the ceiling at a minimum. Preferably white to reflect lots of light.
Menards sells it for around $0.79/sqft. (recent changes in steel price have increased the cost)
Menards sells 1/2 inch OSB for around $0.50/sqft.
The metal can be ordered in custom lengths for an install with fewer seams. It will sag less than OSB. It's far more resistant to moisture damage. And it comes pre-painted which saves money and a ton of time compared to priming and painting the OSB. Plus there's the fire issue that comes with OSB.

I just finished my walls with 7/16" and did steel on the ceiling.

Check craigslist, I was patient and found a guy clearancing 4x10 x 7/16. I ended up buying all of the stuff he had and the bulk deal came out to $6 per sheet. Home Depot wants $18 for a 4x8.

The steel I got on craigslist as well. I save a bundle on that too. I wanted white, but settled with galvanized at half the price.

Check the "material" section of craigslist. Gotta be dilligent and get there first. Deals go quick !

The steel was A LOT lighter and easier to hang than OSB.

I used 7/16 OSB on my walls, but in retrospect, I might've been happier with high-impact sheetrock even though it would be significantly more expensive. I used a block plane to chamfer the edges, then caulked the joints and painted. My ceiling is painted spray foam on the underside of the roof. 7/16 OSB was < $7/sheet when I bought mine in '16.

Still a bit of a WIP.

I have 1/2 OSB on the walls and ceiling.
I like it on the ceiling for ease of mounting the door opener and lighting.
Just screw it in place.
No looking for rafters or need of installing bridging for fastening.
