Outdoor cooker

I was thinking of some outdoor cooking stuff for events. A BBQ, big oven and maybe some kind of grill. I havnt looked internet yet, was trying to figure out where to start. I am sure someone does festivals and was thinking of getting pans, even some warmers.

Well, you mentioned about five different heating devices: 1) BBQ, an offset smoker is typical, 2) oven, indiect fired, sometimes combined with offset smoker, 3) grill, direct fired, lots of choices, 4) (pots and) pans, a cooktop(?), 5) warmer, warming oven, drawers, etc.

The real question is: what are you going to cook? That usually determines the device you need.

If you want to take it to events, you will need to mount it on some kind of trailer.....like these guys did:

I am going to build a gravity feed smoker. Looks kind of like a refrigerator. Can be used as a smoker/oven. Hook up a fan kit and it will regulate itself temperature wise. Look up stumps clone smoker if interested. Nothing will beat ease of use. Lots of pro bbq teams use gravity feed smokers.

Yes, I know it was convoluted but like the idea of a wok. We had a kettle at one point I would like to find again, on a tripod and could dump a bushel of sweetcorn at a time in it. I was thinking of hog or 2 deer size and a pizza type oven could double for baked potatoes or squash. May be able to use it for trays of pulled meat bbq type stuff? I have a couple groups could go as high as 200.

Fuel oil tank on its side.
Old 1000 gallon LP tank.

I have seen a two horse trailer turned into a mobile pizza oven for events. Was well built, even had a sink.

I was trying to google but really wasn't finding examples. I was thinking I could use a big stove I already have to make coals. I have made a couple drum cookers for others, that is an idea, that could be either coals or gas. Most of this would be used here on site, we have big walk in cooler, all the stuff but the cooking equipment.

In order of preference for me:
- gas grill (quick for daily dinner)
- smoker (I like the electric units for convenience)
- deep fryer
- griddle (flat top - a large sheet of heavy metal with a gas burner)
- brick oven (pizza & bread)
- wok
- tandoori oven (naan bread and all things Indian)
- outdoor fireplace (or fire pit or campfire) (set up as a rotisserie, use pie molds, dutch ovens)
- gas burners (for cooking outdoors in the summer)
- charcoal grill (better flavor, but takes more time)
- big green egg
- sand pit (fill with coals, and a wrapped up whole hog...cover with sand and leave it for hours)
- Gaucho Grill (never tried one, looks interesting)

Sberry if you want to drive to the otherside of the state, I started a big cooker project I never finished (was for kids grad party but he wanted Qdoba instead) I would sell you if you wanted something 90% done...

side oil tank, home built trailer (3" angle left over from my bigger trailer build, bolt on wheel bearings on square tube axle, new springs, etc.), 4' propane burner and regulator, decent tires, etc. the mags in the pic are sold, I've got white spoke 14" rims/tires from a camper on it now. HF tongue jack, lights (but not wired up yet), and the compressor tank in the pic I took off and made a barbecue grill out of instead after I made the gas burner, but I'm sure you could find another one to stick on there if you went with charcoal...

you'd just need to put on hinges (make some from black pipe) for the top, add the grease tray, and a rack and you'd be in business...

We thru some events back in the day which were very good, I think one may have made cover of MI Farmer. It was a fair amount of work and the last one I had here which was my wedding reception was way less due to the fact the facility is so much better.
I went to a recent deal that was,,, well not so well done for what and who it was for and someone, an old timer I was helping to a parking lot mentioned this whole thing and its been in the back of my mind for a while. I have been working on how to leverage and make it pay and I am a production ramrod.
I collect the equipment, outfit it, kind of like fire trucks to some extent. We have a big opportunity to tailor and modify a menu and am going to talk to the pig roaster type I know shortly.
