outdoor outlet options with j-box

So my contractor put these recessed mini boxes for outdoor outlets.
Now I am trying to figure out how to add a box and cover. Most of the recessed are the type that have to be mounted under the siding.

So can I use this type of setup:

and do something similar to what this guy did:

Or how do I mount a box from the backside and do a deep cover box like this:

Seems to me you could certainly do what the middle link shows. A lot of the work shown in the link has already been done; you'd just need to enlarge the center hole for the NM clamp. I assume there is already a wire in place?

No box already and I have full access on the other side. There will 2 wires through the hole since this outside outlet is on the "run" of that wall - all protected by an initial GFCI.

acer66 - not a bad idea, but want to keep the face plate to the one shown as it is the color match...

So is what that guy did in the middle link "legal"?

Nothing wrong with what he did and is likely the easiest way to accomplish this. I would prefer a more flush mounted option, but that will depend on how much room that siding opening allows for a cover that swings open. You could flush mount a box from the inside and install a flush in-use cover, but the siding has to allow enough room for it to open. You'd have to do some measuring/fitting.
