So I plan on painting my walls soon. I was going to use an exterior latex. But what I was wondering is what level of gloss everyone is using? Satin, Semi-gloss....etc?

Plus, I was just going to use straight white.

I used gloss, my thought process was that gloss will reflect more light back on to what I am working on.

I was going to use flat to hide imperfections, but went with eggshell because the paint store I went to had a mis-tint 5 gallon bucket for $19.99. My paint is white with a hint of beige. The eggshell will make it easier to wash and the price was right. You may want to stop by or call a few paint stores (even high quality ones like I got mine from) and check for the mis-tint.

I painted the inside of my older garage with interior semi-gloss latex white paint 33 years ago and it still looks great. I used dark grey on the bottom 5 ft. It had never had paint on it prior to that.

Flat will look the best. But that's just about all it's got going for it.

Gloss will highlight every imperfection in the walls, but will be the easiest to keep clean.

I used exterior semigloss (sometimes satin) and am happy with it.

I used super high gloss, or something like that for ease of cleaning. It's a garage, I don't care THAT much what it looks like.
