Peel off alum siding? or leave it?

I'm setting up a utility room as an add-on to the side of the house, on-grade. Its going to have most of the water supply junctions in there, hot water tank, sub panel, and some shelving. Will be insulated and have a concrete floor when done.

Since it's the old outside wall, it has mobile-home aluminum siding, over 3/8" OSB sheathing. It relatively flat, not stepped/layered style.

Is there any reason to not board right over it with 3/4" plywood? Or would you strip the alum siding off? Does it matter? Pros/cons of adhesive between OSB/plywood? Am I overthinking this? :lol_hitti

Going to a bit of work to strip it off as I've partly installed some gear in there already...
