Is it possible for a liquid to defy gravity on metal in the way a wick in an oil lamp 'climbs'?

Yes, it can wick its way upward between two parts by capillary action. Probably slower than moving downward though.

You can also use heat to draw the oil up.

Absolutely, though, the larger the parts, the slower the wicking.

Absolutely! I have made liquid metal defy gravity many many times. Molten solder will follow the heat.
