Pipe fitting selection for adding a whole house filtration system?

Hey gang, I've finally got the time to schedule the city to come shut me down to replace my interior water main. I've decided and acquired the parts to install a whole house sediment filter and charcoal filter while I'm at it. I will not yet be able to get to replumbing the whole place, like I intend to though, So I will be splitting the existing. I have a few fittings that will be needed for things like connecting the two filter housings (plastic) together, and transitions for pex. Galvi? Brass? PVC? ...
Currently, the older parts of the house are galvi, and the newer section done in the early 80's is in copper...

Mostly brass and pex here. Not a fan of galvanized.

I'll get a whole-house sediment filter in eventually. The carbon one only made sense for me at the kitchen, with a dedicated drinking-water tap.

I just use copper. I don't mind fooling with it. I suppose there are times that a copper fitting I want seems awfully overpriced, but those times are manageable.

Copper or brass. I recommend installing a bypass for the filtration system (usually 3 ball valves) so you can easily service it or troubleshoot without losing water to the house completely.

My preferences is PEX, tool prices have come way down. It really depends on the diameter you need.
It's easy to work with and is very reliable.
Agree on the bypass. Buy decent quality valves.

The primary part of the plumbing is going to be PEX. I was mostly just curious about the random little bits and pieces that always seem to come up in any plumbing refit- bushings, *******, street Ls, etc...
