This is my first question about a new build. pole barn will be basic 26x40 about 75’ away from house. insulated, with LED lights, electric door opener, tv, fridge. Maybe someday a lift and electric welder. I need to size wire and panel. 100 amp service would be ideal but probably not needed. Whats common? 60amp? 50? 40?
will tap into house wiring with separate panel and run wire underground.

usage is mostly vehicle storage with occasional maintenance/hobby work

any thoughts or suggestions?

60 amp is probably the most common and would work just fine for what you have, and what I would suggest. You could easily step it up to a 90 amp feeder by using #2 Aluminum MHF cable. When going to a 100 amp sub panel, it's still easy, but not as user friendly or cost effective as just going with 90.

I would suspect 60 amp to be enough. For comparison I have 60 amps sub panel in my garage. Items always in use are 10 gal point of use water heater, pool pump, refrigerator, kegerator, 25 gal air compressor, printer. Other items only on when I'm in he garage are 15 LED lights, 50" plasma tv, surround sound, propane heater, ceiling fans. Items in use in addition to the last 2 groups during a party include multiple roasters/crock pots, coffee maker, hot plate, etc. Only time I tripped a breaker is when someone plugged in 3 roasters/crockpots on 1 circuit. An important thing is to balances your load on the 2 legs of the service.

60A or 90A are the common feeders. You can get away with 60A with what is on your list, no problem.
