Plumbing a Sink in Garage

I'd like to install a sink in my garage. I have water stub in one corner and a drain to septic tank in opposite corner (I think they were going to put the washer out there and never did).

Since I won't be heating the garage all the time, I'm thinking of running the water line exposed at the ceiling level so I can at least see if it leaks after a freeze. Hopefully I'll remember to drain it.

Like to hear from others who have plumbed their garage, please. Pex, PVC, copper? Other ideas?

I've got a sink in my detached shop, 24x40. It had a galvanized pipe coming up through the floor when I bought the place. I put a sink in front of that and used heat tape around it all, all the way up to the faucet, and the end of the faucet spout. Only had it freeze one time when I forgot to plug in the heat tape.

I added a 7 gallon water heater this year, and again heat taped it all. BUT, I put a small electric heater w/fan below the sink (it's enclosed metal laundry sink), and didn't put any tape on the spout. It's always been around 50* when I check the sink with my infra-red thermometer.

The drain just goes through the wall to a perimeter drain, 1 1/2" pvc pipe. To connect the faucet to the water supply, I used the flex hose that came attached to the faucet.

Don't ask.
Don't forget the trap holds water. My uncle had a sink in his garage he'd put antifreeze in it every fall but it froze (cracked) just about about every year because people would use the sink and not replace the antifreeze.

My water line comes into the garage to a frost free hydrant but my garage never gets cold enough to freeze. However, I can shut down the water plumbing if need be.

Yeah, I forgot to mention that I don't have a trap in my drain, as it goes into the underground perimeter tile. Hasn't frozen yet. YMMV.
