I have a 24 x 48 enclosed pole barn with two door openings that measure 118" x 118" on each gable end. I am familiar with roll up doors, but wanted to find a more budget friendly option. I am also interested to find out if garage owners with sliding doors are happy with their doors.

Sliding doors keep the horses in but not much else. If you want/need to seal up the building, like for heat, then a door with a seal is required.
OHD will be the least cost option and easy to install under your trusses. If you have a spare bucket of cash you could also look at hydraulic lift and horizontal bi-fold (also called 'strap-lift').

I have a regular overhead garage door on the front, sliders on the back.
I like them both for different reasons.
The back door being a slider leaves me all the overhead space available inside even with the door open.

One thing I see with yours that is similar to mine is you'd need two doors as there isn't enough room on one side to slide one door fully open.
As stated above, they are pretty tough to truly seal up.

I have two overhead doors on my pole barn. The rear door used to be a slider. I hated it !! I replaced it with an overhead door and installed Lift Master Garage door openers on both overhead doors. Love them now.

Go with 14 or 16' wide at one end and at least 12' wide other end. With those great trusses you have put new header higher and go with overhead insulated doors. With the toys in your photo go with overhead doors. those sliders will not hold up for what I think you will be doing there. The wider doors will help you navigate in and out of building without always having to move 1 or 2 items to get in and out. If kids, wife or friends are going to help you maneuver stuff wider door is a must and higher door will be worth the time and expense after you get done repairing stuff multiple times with sliders on opening you have now.

I don't know that there is a budget friendly door. The bigger
You go the more it costs. Even a sliding door isn't cheap.
