Pole barn insulation. Bubble wrap or foam?

I plan on the near future building a 30X50. Some these guys offer bubble wrap or the white sheet insulation. I was wondering if I should go without and just have the spray in insulation put in.
I am in central OK and plan on heating the place. Here the weather can be 55F one winter day and 5F the next. I've always liked the idea of working on stuff in the winter and enjoying it in the summer.

Even with the sheet insulation going on before the roof and sides these building leak air like crazy. IF I had it to do over it would be no insulation on the build, then foam the heck out of it followed by the appropriate inside covering.

I'll have to see if the builder offers spray in foam or see if someone in the area does it. I like the idea of adding strength to the building and perhaps sound deadening at the same time.
