Pole barn loft - framing q

Hope everyone had a nice xmas,

I have a 40x48x14 pole barn with 3 ply lam posts and want to start working on a long-term project of enclosing one interior gable end of the building (12x40) for an office and another room while also building a loft above that. I plan to first start with 8' walls between the posts and then build my 8' interior walls...double top plate for both. The joists for the room ceilings/loft floor will rest on top of these walls....no ledger. The loft will be the entire 12x40 gable end and I want to be able to put some heavier items up there, nothing crazy though. A few engine blocks maybe but no atvs/machinery/etc.

First part of the project is wall framing between the posts, I plan to use a 2x6 bottom plate flush with the face of the post but would you use 2x4 or 2x6 studs? Im thinking of 2x6 on 16" center but maybe that would be really overkill? Just seems so inadequate to put 2x10 joists on top of a 2x4 wall but curious what you guys think?

Take a look at what I did in my build linked below. I planned the mez into the building and did the rafters and poles accordingly. One thing that has proved to be a good idea is the storage wall that was built with 2x10 studs. If you factor the additional cost of the 2x10 vs the cost of additional storage units and lost floor space you will find that it is cheap storage and floor space.
