I was using foam sheets in my ceiling but it is turning out to be way to much work. Nothing is straight, square. Some of the rafters are 3 inch difference in a 8' run. They are not straight up and down. So, What is an easier way of doing this other then spray foam? I don't think they could get up there to do that.

I would probably strap the ceiling at a better spacing. Then you could do batts, or boards... or both.

Is the framing the bottom chord of trusses or actual ceiling joists?

If they're the latter, you could just reposition them to correct the spacing.
If the former, and you can stand to lose a few inches of headroom, then just run perpendicular straps for rigid insulation or 2Xs on edge for batts.
