My rafters are set at 8ft apart would I be better to go with 2x6 joist over a 2x4.

Wood

I will be hanging plywood for the ceiling.

I'm thinking 2x6 will be the way to go

2 x 6 would be more ridged and heavier. Most pole buildings designed for a ceiling would have truss/rafter spacing at 2' or 4'. Are you sure that your trusses/rafters are designed to carry the weight of a ceiling (especially if you intend to add insulation and/or use it for storage)?
