I am going to stick frame between my poles so I can use regular bat insulation. Can I do 2x4 framing between the posts spaced out flush with the inside face of the post so there's a 6" cavity and use 2x6 bats (My poles are 4x6)? Would be cheaper than using 2x6s to frame everything out. Not sure if this would be acceptable or if it would leave a void in the 2" behind the framing studs.

It would leave a void behind the studs if you aren't going to put something behind them.

You'll loose some of the effectiveness of the 6" insulation through wind washing. Consider using 4" between studs after putting 2" horizontally behind studs.
