I have a above ground salt water pool. The old railing top cap is rusty in spots. I bought new caps. Looking for ideas to protect it. I think it's a galvanized metal. Couldn't get plastic or composite for my particular pool. Only idea I have it clear coat. Checking here to see if anyone has a better idea.

In that environment it's not if it is going to rust, it's when. I agree with you that a clear coat will probably slow down the eventual rusting process.
Other than your time and the cost of the coating, I don't see a down side to your plan.
