Prime old drywall, tape and mud later?

My garage was built 28 years ago, drywall was hung but never finished or painted. The walls are a nice shade of yellow. Can I prime the drywall and finish the joints at a later date when time allows?

I know this is backwards, but I'm short on time and won't be able to get the walls finished, but would like to brighten the space up. I'm planning a backyard wedding reception and plan to use the garage for food, bar and extra general covered space if the weather turns.

Yes you can. Use a good primer that will adhere well to the drywall. Ask for help at your paint supplier, tell them what your plan is. They know that the cheapest isn't necessarily what you need. The primer will be suffice to brighten up the drywall until you finish it off. You will need to re-prime any areas you worked on before painting.
