Question about concrete below drywall

I'm in the process of figuring out my plan of attack for my new 3 car garage. I'm going to epoxy the floor, get all new shelving, new lighting and a 4 post lift. The thing I'm not sure what to do with is this concrete wall that is about two feet high that goes all around the garage. The texture is pretty rough so I figure my options are grinding, use furring strips and install drywall and ???

Any thoughts?

I left mine exposed due to the potential of water on the floors during winter. I plan to tile it when I do the floor.

I think i would grind it somewhat smooth and epoxy it in a offsetting color to the floor and walls, then cut a trim strip of wood to cover the exposed framing and paint the trim as a stripe color and a regular reflective color on the drywall above.

paint those over with drylok extreme it will block all moisture and treat those wood with the Thomson Water seal....
