Question about framing around an existing garage door.

I'm going to be framing out and insulating my garage soon. It's 8" concrete block with brick on the outside, so it's about 12" deep total. Should I pull the door tracks, frame out the opening, then reinstall on the inside, or should I frame up to the sides and top of the tracks and leave them in their current position?

Anyone have pictures of how they have handled something similar?
