I would like to put a 50 amp welder plug in a new construction wall....2 x 4 wood studs with 5/8" drywall...do I use a 5" box and do they make a drywall ring for that outlet?

I'd use a 4 square deep bracket box with a 3/4" mudring instead, should be plenty big enough for what you're doing and it'll be easier to find.

why make it hard? on all my 50Amp (NEMA 6-50R plugs) I just mounted them in regular old Carlon, 2-gang heavy duty/deep plastic boxes. Set them at the correct depth for your drywall and you don't need a mud-ring. Covers are also easy to come by, check in the stainless section, near the plugs themselves at your local big-box store.
