Go into the "User CP" section of the site, from the menu at the top of the page.
You will find a section for private messages. You want to select the box that asks if you want to save a copy of sent messages to a folder.
You can also request delivery confirmation of a message, but the recipient does not have to check the box that confirms he read it, so it's not 100% reliable.
