Most tools are regulated at 90 psi, so I think you'll be fine.

You can run them at 120 psi with a 20 psi differential. Just make sure you don't overamp the motor.

Pressure switch or pilot settings - on/load at 100, off/unload at 120. Intermittant operation at 120 psi is not going to hurt it as long as you enough room in your motor amps to get there. If you don't you may have to slow the pump down with a smaller motor sheave.
