i have a ridge vent on my new garage build and was wondering if I need the baffles to go from the soffit to the ridge cap? I've seen it used just at the soffit and see it used all the way from the soffit to the vent. I have scissor trusses so I'm not sure if that makes a difference.

The purpose of the vents is to remove excess heat and moisture from the non heated / conditioned space above your ceiling.

Running to the ridge cap defeats the purpose of venting. As The Cobbler mentioned, they are to keep insulation from blocking the vent.
