I have quite a few 3" I'd like to cutdown, just haven't devised a way yet.

Maybe Chuck in a drill and roll it on the edge of a bench grinder[emoji2373]

Guessing he means when the edges are wore out cutting them down to 2" etc

This works quite well. If your die grinder has decent low speed control the drill isn't even necessary.

No idea how much of a number woven abrasive would do to the cutting edge, and it'll be a constant variable depending upon just HOW worn the disk in question is

When they get worn I use 3in discs on a 2in backer.
And then they go on the 1 inch backer... They usually self clearance on the diameter too.
Yes, trying to figure out how to cut a 3" down to 2" after the 3" is used up on the edge.
I googled this last night after posting and found a YouTube video. He made a crude press punch similar to linked above. Using a hydraulic press he pushed the cutter through the roloc disc to punch it out.
He removed the roloc button from each one and hot glued it to the cutdown disc. Not sure I wanted to go to that much trouble, would prefer to cut diameter of 3" and leave roll button on.
It seems like there is allot of good material left on a 3" after the edge is gone.

Just cut them with tin snips. No need to try to cut them in a circle. A series of straight lines works fine. The disc is a little more aggressive until it wears the points off.

14:30 mark in the video. He just puts the 3" on a 2" backer then trims it to fit.
Yeah as he says, a "dedicated" old set of snips. Even woven abrasive will dull a nice set in fairly short order I'd think....

Ahhh, didn't think about that. I use 2" and when the edges get wore, I take them off until I need to do some nasty work. I put them back on and try to make sure to hold them flatter to wear the center out.
