Rebuilding a wall, novice question

Bare with me while I ask some basic questions :
There was a one bedroom apartment built inside my garage that I'm converting into shop space. I had previously removed a small room but have decided to bring a wall straight across with a man door, garage door and possibly a window.
I have no carpentry skills or knowledge and just read as much as I can to try and figure stuff out. I built a false wall and cut out half of an outside support wall in order to fit the new doors in the wall. I have a king stud and jack stud on the remaining half of the wall that will be the left side of man door opening. On the far side I have one king stud and 2 jack studs that will support the header over the garage door.
My first question is why can't I rough in the opening of the man door to the exact dimensions of the man door casing that's around the man door ?
Next to the man door will be a 21 inch wide wall in between the garage door, can i just use tapcons to secure the baseplate to the concrete floor ?
3rd question for now is I have a used 10ft wide 7ft tall garage door so I'm making door opening exact size. Now when I held up the garage door track to get an idea of fit it seems the garage door wouldnt even reach into the opening and i dont even have a 2x6 on the side of the studs yet for the track to bolt to.

Typically you oversize the opening and then use shims to install the door casing so that you can adjust the door casing for plumb and thickness. You could do it exact, but there is more chance that something will be out of alignment and you'll have more trouble making the installation.

That should work.

I'm not exactly clear on what you're asking. Typically you frame out the opening to attach the track:

On the garage door the size is 10 wide x 7 high, my plan is to make the opening 10x7, does the door fit inside the opening or on the back side of opening. Ive never seen a garage door in the raw per say without trim panels around it.

Garage door tracks are lagged onto the framing on the interior side of the opening. The door is essentially independent of the opening.

The door fits behind the framed opening. Basically, you have the wall framing, the 2x6s fastened to the back of the wall, and then the track fastens to the 2x6s. That way it can slide past the wall when it opens. If it was "in" the opening, it would have to move back out of the opening and then slide in order to open.

Rookie mistake of making the door opening exact fit and square, the door doesn't want to go in arrgghhh !

I'm going to run 2 2x4's across the top of the wall, how do I attach the 2x6 ceiling joists to the doubled up 2x4s ?

Also you should fill in the space on that top plate so it is continuous to the wall.
Then fill in between the header as you did over the man door.
maybe I missed what type of springs are you using for the garage door?

Ummm... I think that's what I said... ;)

Either toenail them or use a Simpson rafter tie like this:

However, it looks like you're storing things up there. Depending on how much you're putting up there and the weights involved, 2x6s may not be enough.

You also leave room around a man door incase anything shifts a small amount it shouldn’t be wedged in.

The photo of the overhead door framing is correct. If it’s a 10x7 door you use those measurements. The door can fall through the opening if it isn’t attached to the track. The weatherstripping seals it up.

I did continue the double top plate across and added the cripples in line with the existing ceiling joists in back, my back had had enough for that day when I took the photo. I'm onto adding the ceiling joists, I brought them 1 ft + across the supporting wall on the back side. How much overhang on the other end, flush with top plate ?

I don't have anything going on for thanksgiving so I finished framing everything in. Only thing left is sheeting it in plywood and hanging the garage door. I think tomorrow I'll remove the false wall !

Thanks, for never doing and carpentry work and building off the existing structure I'm happy with it. My great used garage door buy only came with one bracket that bolts the track to the wall so that foiled my plan to hang the door yesterday, before my epidural today. To be honest they are difficult to find locally and I might have to just make some.

Little more tension on the springs, some white paint on the walls and this will be done. I went into this with no hands on experience but feel kinda proud of accomplishing this, so much so I'm ready to tear down the next wall in, which is a support wall.
