Recommendations for temperature adjustable shop lights?

One car garage roughly 15'x25' with 9' ceilings. Using it to park, for storage and a work space (light wood working, painting, etc.)

I'm renovating the whole thing and need to select my lighting. I'd prefer to be able to swap bulbs so I don't have to replace the entire unit when it eventually dies, which would also allow me to change the color temperature by swapping bulbs if I wanted. But it seems integrated fixtures are far more common, and it's easier to find an integrated model with a light diffuser / cover that I much prefer to just open bulbs.

Does anyone have a recommended flush mount (not recessed) LED ceiling fixture that has adjustable color temp setting? Barring that, does anyone have a recommended bulb fixture that has a cover?

This type of fixture is probably the most common solution for what you're asking. I hope that you're not thinking that the selection of power or CCT is something that you'll commonly change. That's not really what the switches are for.
To compare this fixture with the LED tubes solution, most tubes are rated for 50,000 hours. This fixture type is rated for 100,000 hours. That about 25 years of normal use. No need to worry about "replacing the entire fixture". Tubes have a warranty of 5 years. This fixture warranty is 10 years. Tubes will get you about 5000 lumens, this will get you up to 6500 lumens. Tubes aren't dimmable. This fixture is.
There's so many advantages of integrated fixtures over LED tubes that we rarely use tubes in a new construction project. They just dont make sense anymore. Retrofits--yes. New buildings--no.

Changing color temp is great when buying cans for living spaces. 3000k in the kitchen, 2700k in a bedroom, 4000k in the laundry room, etc. That versatility isn't needed in a shop and it isn't something you will ever change past the initial install. I wouldn't chase the feature and I wouldn't dismiss integrated fixtures either, for the same reasons noted by @cyberdyke

Helpful replies all around, thank you both! I agree, I'll only adjust the temperature when I install them. I've never had the option of different lighting colors, and the way I use the space will likely change over time as my kids get older, so having the option to select a temperature now, and perhaps change it in 10 years is great. Thanks again for sharing your knowledge!
