Remodel current garage VS building a pole barn...??

You should be asking your Father about local costs of doing the items discussed above not a bunch of guys in other states.
If I was going to add on to a house garage, I would go back in your case as mentioned.
Call me paranoid but I would really limit welding in an attached garage.

Thanks for the reply. And yes I will be talking to him, he mainly does small random interior jobs but he does have a lot of contacts and buddies who can give better insight. I just wanted to get a general direction figured out, find some pros and cons of each situation which I have gotten. Thanks again guys.

If you do an addition and go out the back of the house, that makes an "L" shaped house? I assume that the garage door opens to the laundry/kitchen/dining etc. You can then do a nice semi private patio, maybe covered/screened? Garage on one wall and kitchen/dining on the other. Could be a nice addition to the floor plan of the house. Add some large slider doors from the house to the outside?

Honestly that makes sense lol. Right now we have a large nicely finished breezeway in between the garage and the living quarters of the house. Wife has always wanted a back patio to sit outside and eat dinner on. If I went straight back with the garage yes that would make an "L" and we could do a patio thats semi-private from the neighbors (would be hidden by garage addition). Then put a nice sliding glass door out to the patio from the rear of the breezeway. (y)

I also thought about going back which would make a non matching siding more acceptable since it would not be seen from the road. I wasn't sure how the roof could be incorporated into the existing hip roof though. One problem w/ going back is that the rear wall is supporting the existing roof trusses. So that makes it more difficult to remove that wall. Maybe building a supporting wall w/ an opening and header like for a 16ft garage door would work.
