Good afternoon. I am having a 40x60 pole barn built. We will be trenching and running electrical and water out to barn. I would like to run Ethernet cable as well in the same trench. What would be the best method of doing this to not have interference. Separate conduit for Ethernet? Thanks for the help in advance.

I think they recommend around 6" separation when running in the same space such as a wall cavity and they prefer crossings be a close to 90°as possible. As long as your inspector is good with it witch i see no reason he wouldn't be. I don't see it being a problem in a seperate conduit in the same trench

Definitely separate conduit for multiple reasons...your ethernet would need to be rated at the higher voltage for electrical, and you risk crosstalk running parallel to electrical.
Run an additional oversized conduit to future proof it (1", 2", whatever you are willing to do).
You don't say how long a run you have, ethernet is good to 100m (~330 feet). Fiber can go considerably more...would recommend looking at Ubiquiti equipment which can easily do fiber, is reasonably priced, and is low-end enterprise grade but easy to setup.

Keep them in separate conduits and you'll be fine.
If you open up the ceiling of most commercial buildings, you'll see Cat5/6 criss crossing 120/277v power conduits all over the place.
No need to go crazy with shielded cat6 or anything. You'll be fine.
