...how bad did the roof look from outside the building, 2" sag in 24 feet shouldn't look that bad,...I think your building is just settling in and getting some "character".
...those 2x6's should help a bunch.
...your insulation shouldn't have anything to do with it, it doesn't weigh much,..how bout putting white metal siding up for a ceiling, less work and lighter.?

I will look in to metal ceiling. Also considered 1/8 hardwood paneling.
