Sarasota Florida Garage builder

I'm about ready to build a new shop at my house in Sarasota. Waffling between block built and insulated pole barn. Initial estimates oddly have not been far apart between the two. All the builders I have contacted thus far seem to be pie in the sky high. Does anyone here know of a good builder in the Sarasota are you would recommend? Approximate size of 40x42x14. Thanks. You may end up spending about $100 per square foot. Have you considered structural insulated panels?

I would go with block for the same money as a pole barn, but my shop is sips and very airtight which allows me to air condition when it is hot.
