sealing garage with vertical siding panels

I just had a 40x40 garage built with vertical siding panels. The slab was 40x40 as well, so the ridges on the siding panels are hanging over the slab

what would be the best way to seal these? I was thinking of spray foaming from the inside, then cleaning up the outside with a utility knife. Is there a better/easier way?

Sounds like a plan, but I would spray something on the outside first (spray silicone, Pam cooking spray?) to keep whatever foam that mushrooms out from adhering to the slab or steel. That stuff is tenacious, but without adhesion should break away easily.

There's normally an accessory installed first and the siding sits on it. The name for this I believe is regional along with the different manufacturers, I've generally heard it as "rat guard". It's available in colors and removing the bottom row of screws will allow you to wiggle it up into position. There's a good chance that the screws will pinch it enough to hold it in place. An additional screw down lower every 5-6' would be enough if you have trouble with it falling out with the original screws.

Another option would be to buy the foam "closures" and install them. They are cheaper but will be more difficult to install.

^^^^this is what I have when the building was installed. Panels are locked in and they is no space for anything to enter.

Some kind of base trim should have been installed. It comes in various profiles depending on who makes it. Foam closures would work also and might be easier but you have to get the ones without adhesive.
DO NOT USE SPRAY FOAM. It will get on everything and you will be cutting it back trying to make it look good for ever.
To be fair the company you used probably doesn’t offer base trim or closures but you could ask.

Agree no foam. If you don’t want/can’t do the rat guard, you can insert stainless wool into each one.

Edit-I see you are in houston. You can def. get the trim piece.
