Sealing / Polishing Old Concrete

I'm nearing the end of my garage rebuild and approaching the flooring section. The slab is likely from the 60's / 70's, so it is quite old and dirty.

For the floor, all I care about is reducing the dust/dirt on it and that it is somewhat easy to clean up liquid spills. I don't care if it leaves a stain where the spill was, as long as after quick clean up of the spill, the stain is "dry enough" that I'm not going to get it on my clothes/shoes.

Right now the floor is dirty, dusty, old stains, and most recently covered in white paint from me just finishing up spraying the new drywall.

I don't think an epoxy floor is what I want. I do auto repair, welding, and metal fab and I just want normal concrete that is cleaner than what I have and easier to keep clean. I think possibly some grinding/polishing/sealing is what I want, but I'm not really sure and am looking for ideas/suggestions, the steps I would need to take, etc?

There are a couple of threads on here with people asking similar things, but haven't really found a ton of information.
