I would not caulk it. That's asking for trouble.

Maybe try painting the scribed board, but IMO, the straight one looks OK there.

The reality is that nearly no one will notice it either way, except you. So do what you like better

Scribed looks better to me, but as stated it's your house.

I would NOT caulk that trim/brick junction.

I prefer the straight board. The fireplace is old and imperfect. Don’t hide that, accentuate it with the straight board. Sometimes “perfection” isn’t.
