I would not caulk it. That's asking for trouble.

Maybe try painting the scribed board, but IMO, the straight one looks OK there.

The reality is that nearly no one will notice it either way, except you. So do what you like better

I prefer the straight board. The fireplace is old and imperfect. Don’t hide that, accentuate it with the straight board. Sometimes “perfection” isn’t.
