Sheetrocking on Uneven joists?

I have to ask how level is the floor?
the ceiling is off, I bet the floor is too. the entire house is probably way out of level by the looks of things.
the joist above the new ones are coming out to give more height to the second floor?
first off,in my opinion , that's way too much work to do for free,and you have to decide how far you're going with leveling things.... or do you just make it flat ?
I think you're chasing a never ending project if you're looking to make everything level
The whole project was partly based on raising the upstairs floor from sagging. Yes the whole house is out of level. The joists above were jacked up to raise the upstairs floor and the joists on the bottom are holding the original joists in place.

After contemplating it a little bit I was thinking they don't care about quality work though I do. I am just going to throw sheetrock up and get it over with.

Denwood - That is a great idea it would be less weight as well. However I am no longer making the ceiling level.
