I am working on a bathroom in my old brick farmhouse and the plan is to have shiplap on the interior walls.
Questions of the day- can this replace the drywall? there is very little drywall left and I am wondering if I need to replace it with green board.

Two walls are exterior and it goes brick on the outside, stud wall with insulation, vapor barrier, drywall.
The interior walls are bare studs right now.

In my area it’s acceptable. I’d check with your local code person to make sure it’s not required for fireproofing

I can't see why it would not be allowed. My question is, how in that nice humid environment of New England and with the moisture produced in a bathroom do you prevent mold and mildew behind it. On an exterior wall you could easily reach the dew point. I am not sure on this, but perhaps you could put up stringers to create an air space behind the shiplap. I don't know that it will be a problem. Comments?

Joanna does it all the time. I'd just put building paper (15 lb roof felt) over the studs and lap it up.

What does the roof felt do? Wick the moisture away?
I actually happen to have a roll.

Same thing as the vapor barrier you described. Seal or paint before install. Don’t think the back will be mold prone as there has to be a fan and if it’s sealed before install it has a harder time getting started. Always a possibility though in a bathroom with most products.
