You could do ACP. Less resistant to "bumps" etc. but would be quieter - untill you painted it.

Because it I expensive, I'm looking at rough sawn pine options.

How far apart are your trusses/rafter ties/or other overhead framing?

I guess it depends what kind of shop you have that would determine what is “typical”. My shop is a built-in carport I walled and insulated. It shares a roof with my house and has a 1/2” plywood ceiling. On the other side of that ceiling is my attic with no insulation yet. When I walled the carport-in I removed the existing vinyl ceiling covering because I didn’t want it to look like I walled-in a carport, now it looks like it has always been an attached garage, just no direct access to the house.
If I had pole barn type shop it would probably have a metal roof. In that case, if I were trying to cool it I would put up some sort of joist/purlin system to create an annular space for insulation and 1/2” plywood ceiling.

Just be sure to follow the building codes relative to what type of building you're working with.
