Not my garage, but the home. Old carport was closed in. This exterior wall is slab poured around piers. Gap is a multiple issue, but can’t have wood in contact w/ soil (termites).
Mice & snakes love to over winter under the slab. Weed whacker damages the paint & siding. My first thought is similar to last pic. 1/8x3” flat stock to close the gap. Open to other ideas.

You could also think about a 1x3 pvc trim board. Or maybe better so the color is all the way through get some 1x6 trex deck board and rip it to a 1x3. You have to get the non capped type so it is the same color all the way through. Or do whichever and pour 8 inch of decorative stone along there so you can spray it once in a while w/ weed killer and don't need to use the weed wacker.

Termites don't need wood to be in contact with the ground. They can build mud tunnels up concrete to get to the wood.

All above are great & correct for new build but don’t help with this situation. Goal is to work with what it is while not making it attractive for termite access.
Under the T1-11 siding is board and batten. Might pull off a siding section to explore other ideas.

I would get a good coating of bora care on any bare wood you can get to. Framing, sheathing, siding. It's a permanent wood treatment that is really easy to apply.

Anything near grade should be a composite/synthetic, or at least treated.

Find a new band that is made from a material that is suited for ground contact and is about 8" wide. There are multiple choices for this. Snap a line, set the saw to just cut through the siding and cut the siding off to allow the new band to fit under it with just enough clearance for a z flashing. Before you put up the flashing, paint the cut edge fully - maybe 2 coats.

What about some of that faux stone siding. It looks pretty nice and is bug resistant.

Buddy did his garage with kneewall fiberglass faux stone. Doesn't look too bad.
Were only dealing with 4-8” here, think it would look odd.
Another thread has surfaced dealing with the same issue. Im exploring pressure treated, insect resistant dimensional as the ground contact & termite shield cap on top of that. Just need to mate everything to the siding & board/batten exterior.
