Single slope ceiling lighting plan?

I'm finishing up my 30x32 single slope garage (much farther along than this picture, but it gives the best perspective on the design). The ceiling starts at 10.5 ft on the low side, and goes up to 14 feet on the high side. I'm trying to figure out a lighting layout that gives consistent lighting across the shop without hanging all lights on a single plane at 10 feet in order to keep as much height as possible accessible. I tried to download Dialux and a few other pieces of lighting software in order to run some calculations but the learning curve was steep.

My lighting goals are:
4000k
High brightness for detail oriented tasks, but dimmable. I would ideally like maximum brightness to be 100fc for very detail oriented work, with 40-50 being my usual working level.
High CRI
Doesn't prevent a lift or other uses of space up high
Doesn't cost an arm and a leg

Edit: forgot to mention: I'll probably drywall the walls, and leave the ceiling with the vinyl backed fiberglass insulation exposed. Floors I'd like to install a grey polyurea floor coating.

Any recommendations would be greatly appreciated!
