I have a BIG compressor 120 gallon in my shop, a pancake compressor for air nailers, a 20 gallon, etc., I want a dedicated unit for my vacuum sealer.
I have a vacuum sealer that requires 1.75 CFM at 80 PSI. It is a 20" commercial unit. I want to make a vacuum sealing "station" so I am looking a small compressor that I can mount so the vacuum sealing can be moved around. I use it to store game and meat mostly.

Not familiar with those processes, but have to ask anyway, why a compressor and not a vacuum pump? I've got a couple of small direct drive vacuum pumps on the shelf which were essentially free. I'd send you one, but it won't fit in a Flat Rate Box.

Kind of of like a sand blaster Moving air creates a vacuum.

Looking like maybe a small tankless one meant for tires might work, but would need a valve to reduce the PSI

How small is small? How much is too much? Do you need continuous vs intermittent? $100 is basically your minimum and under $200 likely will do it. I would suggest a small, quiet compressor from California Air Tools or others. I don't think CAT is anything overly high quality but they are well known in the space. Anyway, here is a Makita that might fit the bill

It will barely keep up with your stated needs but it is small and quiet.
This Dewalt is a bit bigger, a bit more expensive and has more CFM and pressure but not as quiet.

I bought the unit for $200 and the seller gave me the "small" compressor he used. It was a horizontal unit (20 gallons). I have another one of those in my machine shed for tires. I have a pancake compressor I use for nail guns and rivet guns. I have a BIG horizontal compressor in my shop. I might even have a few others. I want to mount the sealer on a cart and put a compressor on the cart as well. I could then pull out the cart when I process game or buy in bulk, but store it away the rest of the time.

I will probably just mount one of my units, but I think they all might be overkill or noisy. I was thinking that there might be a small compressor. The size I was thinking were the ones that are 12V for tires. They make a 120v unit, but without a tank it runs 100% of the time.

How long will it run for? Constant while the table is in use? Getting something small with a 100% duty cycle will be expensive

I had a CAT compressor too and mine ran for a few weeks non-stop at our vacation home while I was away. The plastic tube that goes from the compressor to the tank cracked from age and the compressor ran constantly trying to fill the tanks (or pressurize my garage) to 125psi before it would shut off.

I have the Cat 4.6 gal 2HP (4620AC) model, and I've really liked it. Very quiet. My spawn has the 1HP 2gal used for a pressure pot and has also been happy.

I'm never going to own a damn pancake again - so insanely loud...
