I am working on a friends snowmobile. Mice got into it. One short wiring harness got destroyed and we are going to replace it. Another one has one wire that they chewed about half the coating off for about an inch. This is a pretty big harness so we aren't going to replace it. anyone have suggestions what to put over the little bit of exposed wire. Is that liquid electrical tape any good? I'm not sure I can get the wire out of the plug to put heat shrink on it. any suggestions would be appreciated.

If possible, de-pin the wire from the connector and use dual wall heat shrink.
I just bought a set of "keys" to de-pin almost every type of connector. I got a 41 pcs Stainless Steel wire terminal removal tool set off Ebay for under $9.00 shipped. Handy to have

I use heat shrink.. In bulk. There are split "loom covers" if you're looking to cover up the broader harness.
I know that Toyotas had some years where they built cars with some very tasty wires.

Don't ask.
Should have used adhesive lined heat shrink. Other options would be self fusing tape or heat shrink tape but still with some type of seal.

If it isn't easy to unpin the connector - adhesive lined shrink wrap **** connector is another good way to go.
