Spacing a "cubby" for a Fridge

I'm framing a space b/w a closet and a fridge separator wall for a 33" French door fridge. I'm going to install fridge panels on each side and an over-fridge cabinet on top.

The fridge and the panels measure 34 1/2" (~33 + 3/4*2). I need 5/8" sheetrock on each side = 1 1/4". That totals 35 3/4". How much extra wiggle room should I allocate for out of plumb, etc issues?

Do you already have the fridge? The manual states what clearance gap needs to be provided around the fridge.
The fridge is 32 3/4. The clearance is 1/8" on each side.

My question is how much wiggle room should I add to deal with slightly out of plumb walls.

There should also be guidance on gaps for air flow to keep the mechanisms cool. If the unit isn't designed to be in a cubby, then you may need wider gaps for air flow.

IMHO, extra clearance is much easier to handle than insufficient.

I have yet to learn of a problem with too much air flow around a refrigerator.
