Stem wall insulation form remove it or leave it?

Just starting on a 38 x52 garage. The perimeter stem wall was made with 2" styrofoam forms. (2 inch foam 8 inches concrete and 2" foam) set down on a footer. The stem wall will extend 16" above the finished floor. I am putting pex in the floor and probably going to use spray foam on the walls. My question is, should I remove the inside 2" of foam from the wall or leave it. I am planning to leave the 2" foam on the outside and cover it. If I leave it on the inside, i don't think that i will like that extra ledge around the inside perimeter and that it will be extending in farther than the 2X6 walls (benches and cabinets would not sit flush to the wall). Would i be removing too much insulation that would help with heat loss? By the way location is Nebraska.

Since you're putting PEX in the floor, I assume you're insulating under the slab. Cut the foam down below the slab and tie the under floor insulation into it. Then put some expansion joint material along the walls and pour your slab after reinforcement and PEX.
