Storage shed or second garage...aka man cave?

This summer, I had planned to build a 32x40 storage shed...then I started researching here whether to build a pole shed or stick built. Now my mind is running with ideas of in floor heat, 12' ceilings, lift, loft etc!

I already have a 30x30 three car attached garage, in floor heat, fully drywalled, 8' doors. It is stuffed currently with 3 cars, two tractors, and an ATV. My truck is forced to stay outside. I live on 3 acres, and after a phone call to the town, they will allow another building up to 1320 sqft, up to 20' high, and must not be located in front of the house. With those parameters I am planning a 32x40, undetermined height and roof slope. I plan to stick build myself mostly.

Questions:
1. Anyone with a similar setup as I'm describing? Where do you work and keep your tools? I mainly do vehicle maintenance/mods. Not enough to heat a second building full time in winter.

2. I'd love a lift. Are 10' walls with a vaulted ceiling/rafters enough height? I like the idea of a half attic/loft, half vaulted for lift.

3. Run pex for in floor heat? I'm leaning towards no, since I don't plan to heat it full time. I was thinking if anything heating with wood occasionally, for when I'd need to use the lift.
